This Pizza Grilled Cheese lunch recipe combines the comforting nostalgia of a classic grilled cheese sandwich with the bold, savory flavors of pizza. Featuring melted mozzarella and Parmesan cheeses, turkey pepperoni, and a spread of marinara sauce, this easy skillet-cooked sandwich is perfect for a quick yet satisfying meal. The addition of garlic powder, Italian seasoning, and fresh basil elevates the taste to pizza perfection.

Ingredients

Bread and Butter

  • 4 slices of bread (sourdough, white, or whole wheat)
  • 2 tbsp butter (softened)
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning

Fillings

  • ½ cup marinara or pizza sauce
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 12 slices of turkey pepperoni (or your preferred topping)
  • 2 tbsp chopped fresh basil (optional)

Instructions

  1. Prepare the Bread: Spread a thin layer of softened butter on one side of each slice of bread. Then sprinkle the buttered side with garlic powder and Italian seasoning to add extra pizza-inspired flavor as the bread toasts.
  2. Assemble the Sandwich: Place two slices of bread, buttered side down, on a flat surface. Spread marinara sauce evenly on the inside of each slice. Layer shredded mozzarella cheese, grated Parmesan, turkey pepperoni, and any additional toppings you prefer. Top with the remaining two bread slices, buttered side facing up.
  3. Toast the Sandwich: Heat a skillet or griddle over medium-low heat. Place the assembled sandwiches in the pan and cook for 3-4 minutes on each side. Press down lightly with a spatula to help the cheese melt evenly and the bread to brown nicely. Carefully flip the sandwiches to avoid spilling the fillings and continue cooking until the bread is golden brown and the cheese is fully melted.
  4. Serve and Enjoy: Remove sandwiches from the skillet and allow them to cool slightly for about a minute. Slice each sandwich in half, garnish with chopped fresh basil if desired, and serve warm. For added flavor, offer extra marinara sauce on the side for dipping.

Notes

  • You can substitute turkey pepperoni with vegetarian pepperoni or other preferred toppings such as mushrooms or olives.
  • Adjust cooking time and heat as needed to prevent burning while ensuring cheese melts thoroughly.
  • Using a heavy skillet or pressing the sandwich with a spatula or weight helps achieve a crispier crust.
  • For a gluten-free version, use gluten-free bread.
  • Fresh basil adds a bright herbal note but is optional depending on availability.
