This Caramel Apple Cookie Skillet is a delectable autumn-inspired dessert featuring browned butter cookie dough topped with warmly spiced, caramelized apples. Baked in a skillet to achieve golden edges and a soft, chewy center, it is perfect served warm with a scoop of vanilla ice cream for a cozy treat.

Ingredients

Cookie Dough

  • 1 Cup Unsalted Brown Butter
  • 1 1/4 Cups Packed Brown Sugar
  • 1/4 Cup Sugar
  • 2 Large Eggs (Room Temp)
  • 1 Tsp Vanilla Extract
  • 2 2/3 Cups All Purpose Flour (Spoon & Leveled)
  • 1 Tsp Baking Soda
  • 1 Tsp Cinnamon
  • 1/2 Tsp Allspice

Apple Topping

  • 2 Large Honeycrisp Apples
  • 1/2 Cup Sugar
  • 1/4 Cup Brown Sugar
  • 2 Tsp Cinnamon
  • 1 Tbsp Granulated Sugar (for topping)
  • 1 Tsp Cinnamon (for topping)

Instructions

  1. Brown the Butter: Melt unsalted butter in a large oven-safe skillet over medium heat, cooking until it turns golden brown and releases a fragrant nutty aroma. Remove from heat and allow it to cool slightly to prevent cooking the eggs later.
  2. Cream the Sugars and Butter: In a large mixing bowl, combine the browned butter, packed brown sugar, and granulated sugar. Cream together until the mixture is smooth and well combined.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract for flavor.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, and allspice to evenly distribute the leavening and spices.
  5. Combine Wet and Dry Mixtures: Gradually add the dry ingredients into the wet ingredients, stirring just until combined to avoid overmixing and developing gluten, which keeps the cookie tender.
  6. Prepare the Apples: Peel, core, and dice the honeycrisp apples into bite-sized pieces. In a medium bowl, toss the diced apples with the granulated sugar, brown sugar, and cinnamon to coat evenly and enhance caramelization during baking.
  7. Assemble the Skillet: Spread the cookie dough evenly in the prepared oven-safe skillet. Arrange the spiced apple mixture evenly over the top of the dough.
  8. Bake: Place the skillet in a preheated oven at 350°F (175°C) and bake for 25-30 minutes, or until the cookie edges are golden brown and the center is set but still soft.
  9. Cool and Serve: Allow the skillet to cool for at least 10 minutes before serving. Enjoy warm by itself or topped with a scoop of vanilla ice cream for an extra indulgent treat.

Notes

  • Use room temperature eggs to ensure smooth mixing and better texture.
  • Honeycrisp apples provide a perfect balance of sweetness and tartness; however, Granny Smith or Fuji apples can be used as a substitute.
  • Brown butter adds a nutty richness; be careful not to burn it while browning.
  • Do not overmix the dough once dry ingredients are added to keep the cookies tender.
  • This skillet dessert is best served warm but can be reheated gently.
