Ingredients

Whipped Feta:

  • 200g feta cheese
  • 60g Greek yogurt or sour cream
  • 1 tbsp olive oil

  • Cracked black pepper, to taste

Roasted Grapes:

  • 1½ cups red seedless grapes
  • 1 tsp olive oil
  • Pinch of salt

Toppings:

  • 3 tbsp walnut halves, toasted
  • 1½ tbsp hot honey (or honey + pinch of chili flakes)
  • Optional: fresh thyme leaves or chili threads

To Serve:

  • Warm pita, baguette slices, or seeded crackers

Instructions

  1. Preheat and Roast Grapes: Preheat your oven to 200°C (390°F). Toss the red seedless grapes with olive oil and a pinch of salt. Spread them evenly on a baking sheet and roast for 15–18 minutes until they become blistered and juicy, releasing their natural sweetness.
  2. Whip Feta Mixture: In a blender or food processor, combine the feta cheese, Greek yogurt or sour cream, lemon juice, olive oil, and cracked black pepper. Blend until the mixture is smooth, creamy, and fluffy. Chill in the refrigerator if necessary to maintain texture.
  3. Toast Walnuts: In a dry pan over medium heat, toast the walnut halves until they are fragrant and lightly browned. This usually takes a few minutes; stir frequently to prevent burning. Once toasted, roughly chop the walnuts if desired to enhance texture.
  4. Assemble the Dish: Spoon the whipped feta into a shallow serving bowl. Arrange the roasted grapes with their juices on top of the feta. Scatter the toasted walnuts evenly over the surface.
  5. Add Final Touches: Drizzle hot honey generously over the assembled ingredients. If you like, garnish with fresh thyme leaves or chili threads for an added hit of aroma and spice. Serve immediately alongside warm pita bread, baguette slices, or your choice of seeded crackers.
