Ingredients

Halloumi and Sauce

  • 250g halloumi cheese
  • 4 tbsp sweet chili sauce

Vegetables and Wrap

  • 1 cup mixed bell peppers, sliced
  • 1 cup cucumber, sliced
  • 2 tbsp freshly squeezed lime juice
  • 1 tbsp olive oil
  • 4 soft flour tortillas

Instructions

  1. Prepare the Halloumi and Vegetables: Slice the halloumi into 1/4-inch thick pieces and chop the mixed bell peppers and cucumber into bite-sized slices to ensure easy layering in the wraps.
  2. Fry the Halloumi: Heat a non-stick skillet over medium heat and add the olive oil. Once the oil is hot, fry the halloumi slices for 2-3 minutes on each side until they are golden brown and crispy on the edges, then remove from heat.
  3. Assemble the Wrap: Lay one soft flour tortilla flat on a clean surface. Layer the crispy fried halloumi pieces evenly on the tortilla, followed by the fresh bell peppers and cucumber slices.
  4. Add Sauce and Lime: Drizzle approximately 1 tablespoon of sweet chili sauce over the fillings in each wrap. Squeeze fresh lime juice over the toppings to add a zesty brightness.
  5. Roll and Serve: Roll the tortilla tightly around the fillings to enclose them securely. Repeat this process with the remaining tortillas and ingredients. Serve immediately while the halloumi is warm and crispy.
