Ingredients

Chicken and Sauce

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup sweet chili sauce
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil (for cooking)

Wrap Fillings

  • 4 whole wheat tortillas (10-inch)
  • 1 cup mixed vegetables (bell peppers and carrots), sliced
  • 1 cup lettuce leaves (romaine or butter lettuce)

Instructions

  1. Cook the Chicken: Preheat a skillet over medium heat and add olive oil. Place the chicken breasts in the skillet and cook for 7-8 minutes on each side until golden brown and the internal temperature reaches 165°F (75°C). Remove the chicken from the heat and let it rest for a few minutes before slicing it thinly.
  2. Prepare the Sauce: In a medium bowl, combine the sweet chili sauce, minced garlic, low-sodium soy sauce, and fresh lime juice. Mix well until all ingredients are fully incorporated.
  3. Assemble the Wraps: Lay a whole wheat tortilla flat and place a portion of shredded chicken in the center. Add the mixed sliced vegetables and a handful of lettuce leaves on top of the chicken. Drizzle the prepared sauce mixture evenly over the filling.
  4. Wrap and Serve: Fold the sides of the tortilla over the filling and roll tightly to form a wrap. Slice each wrap diagonally for easier handling and presentation. Serve with extra sweet chili dipping sauce if desired.
