Ingredients

Homemade Sugar Free Blueberry Syrup

  • 2 1/4 cups blueberries (fresh or frozen)
  • 1 cup granulated sweetener (erythritol or preferred sugar substitute)
  • 1 cup filtered water
  • 1 tsp lemon juice

Soda Assembly

  • Ice cubes (3-4 per serving)
  • 1 cup club soda
  • 1/4 cup sugar free blueberry syrup (prepared from above recipe)
  • 3 tablespoons half & half
  • 1/4 cup whipped cream (optional, for topping)

Instructions

  1. Prepare the Sugar Free Blueberry Syrup: In a medium saucepan, combine the filtered water, granulated sweetener, and lemon juice. Stir well until the sweetener dissolves. Add the blueberries, whether fresh or frozen, and stir to combine.
  2. Simmer the Blueberries: Place the saucepan over low-medium heat and bring the mixture to a gentle simmer, stirring occasionally. Let it simmer for about 15 minutes to soften the blueberries and infuse flavors.
  3. Mash the Blueberries: Using the back of a wooden spoon or a potato masher, mash the blueberries in the saucepan to release their juices. Then increase the heat to medium and allow it to simmer uncovered for another 8-10 minutes until slightly thickened.
  4. Strain and Cool the Syrup: Remove the syrup from heat and let it cool slightly. Strain the mixture through a fine mesh strainer into a container to remove solids and seeds. Refrigerate the syrup for 1-2 hours until thoroughly chilled before using.
  5. Assemble the Italian Cream Soda: In a tall glass, add 3-4 ice cubes. Pour in the club soda to fill half of the glass. Add 1/4 cup of the chilled sugar free blueberry syrup.
  6. Add Creaminess: Slowly pour 3 tablespoons of half & half over the soda mixture to create a creamy swirl effect.
