Ingredients

Pasta and Vegetables

  • 1 pound pasta (any shape)
  • 2 cups cooked corn kernels
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeno pepper, seeded and minced

Dressing

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup freshly chopped cilantro
  • Juice of 1 lime
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside to cool slightly.
  2. Prepare the dressing: In a medium bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth and well combined.
  3. Combine the salad ingredients: In a large mixing bowl, add the cooked pasta, cooked corn kernels, diced red bell pepper, finely chopped red onion, and minced jalapeno pepper. Pour the dressing over the mixture and toss gently to coat all ingredients evenly.
  4. Add cilantro and adjust seasoning: Stir in the freshly chopped cilantro and toss the salad again. Taste and add additional salt and pepper if needed.
