A refreshing and visually appealing Strawberry Matcha Boba drink that combines chewy tapioca pearls with sweet strawberry puree, creamy milk, and vibrant ceremonial grade matcha, perfect for a unique teatime treat.

Ingredients

Boba Pearls

  • 50 g tapioca pearls
  • 25 g brown sugar

Strawberry Layer

  • 3 large strawberries, roughly diced

Main Drink

  • 300 g milk, dairy or non-dairy

Matcha Layer

  • 1 teaspoon matcha powder, ceremonial grade
  • 55 g hot water

Instructions

  1. Cook Tapioca Pearls: Bring a small pot of water to a boil. Once boiling, add all of the tapioca pearls at once. Stir immediately to separate any clumps and boil for 15 minutes.
  2. Rest Tapioca Pearls: After boiling, cover the pot and remove it from heat. Let the pearls sit covered for another 15 minutes to achieve the right chewy texture.
  3. Syrup Preparation: Drain the water from the tapioca pearls and transfer them into a small bowl. Add the brown sugar and stir until fully dissolved into a syrup coating the pearls. Set aside.
  4. Muddle Strawberries: In a serving glass, add the diced strawberries. Use a muddler, wooden spoon, or the flat end of a rolling pin to crush and mash the strawberries into a rough puree, releasing their flavors.
  5. Assemble Pearls and Strawberries: Add the cooked tapioca pearls along with the brown sugar syrup into the glass with the muddled strawberries.
  6. Add Ice and Milk: Fill the glass halfway with ice cubes. Pour in milk until about ¾ full, then stir gently to mix the strawberry base with the milk and loosen the pearls for easier sipping. You may opt to keep layers separate if preferred.
  7. Prepare Matcha: In a chawan or small bowl, sift the ceremonial grade matcha powder. Add hot water and whisk briskly in an “M” motion using a bamboo whisk for about 15 seconds until the matcha froths and becomes smooth.
  8. Layer and Serve: Pour the frothy matcha carefully over the strawberry milk layer to create a layered drink appearance. Serve immediately, with the option to stir before drinking to combine all flavors.
