A flavorful and easy one-pan meal featuring Italian sausage roasted to perfection alongside colorful bell peppers, tangy Granny Smith apples, and sweet red onions. This sheet-pan dish combines savory, sweet, and aromatic elements for a delicious and hassle-free dinner.

Ingredients

Meat

  • 1 lb Italian sausage (mild or spicy)

Vegetables and Fruits

  • 2 bell peppers (1 red, 1 yellow), sliced
  • 2 Granny Smith apples, cut into wedges
  • 1 red onion, cut into wedges

Seasonings and Oil

  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy clean-up and even cooking.
  2. Toss Vegetables and Apples: In a large bowl, combine the sliced bell peppers, apple wedges, red onion, olive oil, dried oregano, salt, and pepper. Toss thoroughly until all pieces are well coated with the oil and seasonings.
  3. Arrange on Baking Sheet: Spread the vegetable and apple mixture evenly on the prepared baking sheet. Nestle the Italian sausages among the veggies to ensure even roasting.
  4. Roast: Place the baking sheet in the oven and roast for 25-30 minutes. Stir the mixture halfway through cooking to promote even browning and cook the ingredients uniformly.
  5. Check for Doneness: Using a meat thermometer, ensure the sausages have reached an internal temperature of 160°F (70°C) and check that the vegetables and apples are tender before serving.

Notes

  • Choose mild or spicy Italian sausage based on your heat preference.
  • If you prefer other apple varieties, tart apples like Granny Smith work best to avoid overly sweet notes.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated in a skillet or oven.
  • For a gluten-free meal, verify that the Italian sausage does not contain any gluten additives.
  • You can add additional herbs like thyme or rosemary for extra flavor.
