Pear Tarte Tatin is a classic French dessert featuring tender, caramelized pears baked under a golden puff pastry crust. This upside-down tart combines rich brown sugar caramel with buttery pears to create a luscious, elegant treat perfect for any occasion.

Ingredients

Pears and Caramel

  • 4 firm pears (Bosc or Anjou)
  • 6 tablespoons unsalted butter
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract

Dough

  • 1 sheet puff pastry (store-bought)

Instructions

  1. Preheat Oven and Prepare Skillet: Preheat your oven to 375°F (190°C) and select an oven-safe skillet suitable for both stovetop and oven use.
  2. Make the Caramel: Melt the unsalted butter over medium heat in the skillet, then add the brown sugar and stir continuously until it dissolves completely and forms a smooth caramel, cooking for about 2 minutes.
  3. Arrange Pears: Slice the pears and arrange them in the skillet, cut-side down, atop the caramel in an even layer.
  4. Cover with Puff Pastry: Roll out the puff pastry sheet if needed and cover the pears, tucking the edges into the skillet to enclose the fruit. Poke holes in the pastry to allow steam to escape during baking.
  5. Bake the Tart: Place the skillet in the preheated oven and bake for 25-30 minutes or until the puff pastry is golden brown and puffed up.
  6. Cool and Flip: Remove the tart from the oven and let it cool slightly. Carefully invert the skillet onto a serving plate to reveal the beautifully caramelized pears on top.

Notes

  • Use firm pears like Bosc or Anjou for their ability to hold shape during cooking.
  • A cast iron or heavy oven-safe skillet works best for even heat distribution.
  • Be careful when flipping the tart as the caramel will be hot and may spill.
  • Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.
