These No-Bake Rocky Road Squares are an easy and delicious treat featuring a rich chocolate base mixed with marshmallows, crunchy graham crackers, and nuts. They require no baking and are perfect for a quick homemade dessert or snack.

Ingredients

Rocky Road Squares:

  • 2 cups semi-sweet chocolate chips
  • 1/2 cup unsalted butter
  • 1/4 cup light corn syrup or honey
  • 1/2 teaspoon vanilla extract
  • 2 cups mini marshmallows
  • 1 cup chopped graham crackers or digestive biscuits
  • 3/4 cup chopped walnuts or almonds
  • 1/4 teaspoon salt

Instructions

  1. Prepare the Pan: Line an 8×8-inch pan with parchment paper to prevent sticking and make removal easier once the squares have set.
  2. Melt Ingredients: In a saucepan over low heat, melt the semi-sweet chocolate chips, unsalted butter, and light corn syrup or honey together, stirring frequently until the mixture is smooth and fully combined. Stir in the vanilla extract and salt, then remove from heat and allow to cool for 5 minutes to prevent the marshmallows from melting when mixed.
  3. Combine Ingredients: Gently fold the mini marshmallows, chopped graham crackers (or digestive biscuits), and chopped walnuts (or almonds) into the melted chocolate mixture until everything is evenly coated.
  4. Press into Pan: Transfer the mixture into the prepared pan, pressing it down firmly and evenly using a spatula or the back of a spoon to create a compact layer.
  5. Chill: Refrigerate the pan for at least 2 hours or until the rocky road mixture is firm enough to cut into squares.
  6. Serve: Once set, lift the rocky road slab out using the parchment paper, cut into squares, and serve.

Notes

  • For a nut-free option, omit the walnuts or almonds or substitute with seeds like pumpkin or sunflower seeds.
  • Store the rocky road squares in an airtight container in the refrigerator for up to one week.
  • Light corn syrup can be substituted with honey or golden syrup, but keep in mind this might slightly change the flavor and texture.
  • Allowing the chocolate mixture to cool slightly before adding marshmallows helps maintain their shape and texture in the final product.
  • Feel free to add dried fruit, such as cherries or cranberries, for added flavor and texture variation.
