  • ¼ cup sunflower seed butter (unsweetened)
  • 1 tsp vanilla extract
  • ⅓ cup chocolate protein powder (32g)
  • ¼ cup cocoa powder (24g)
  • 2 tsp instant coffee
  • Pinch of salt
  • Water (if dough is too dry)

Instructions

  1. Soften the dates: Place the pitted Medjool dates in a small bowl and pour hot water over them until fully submerged. Let them soak for 5-10 minutes to soften, then drain the water.
  2. Blend the dates: Transfer the soaked dates to a food processor and blend until smooth.
  3. Add remaining ingredients: Add sunflower seed butter, vanilla extract, chocolate protein powder, cocoa powder, instant coffee, and a pinch of salt to the food processor. Blend the mixture, stopping occasionally to scrape down the sides, until the dough forms a large, sticky ball. Add a little water if the dough is too dry to come together.
  4. Form energy bites: Roll the dough into approximately 1-tablespoon-sized balls. This quantity should yield about 17 energy bites.
  5. Store the bites: Place the bites in an airtight container or resealable bag and store them in the refrigerator or freezer for freshness and longer shelf life.

Notes

  • Soaking the dates helps achieve a smooth dough consistency.
  • If you don’t have sunflower seed butter, a similar seed or nut butter can be substituted, but this will change the nut-free status.
  • The energy bites can be stored in the fridge for up to 1 week or frozen for up to 1 month.
  • Adjust the instant coffee amount to taste if you prefer a stronger or milder mocha flavor.
