Ingredients

Matcha Puppy Chow

  • 1 cup (170 g) couverture white chocolate chips
  • ¼ teaspoon salt
  • 4 ½ teaspoon (10 g) matcha powder
  • 4 cups Chex rice cereal

  • 1 cup (210 g) powdered sugar
  • 2 teaspoons matcha powder

Instructions

  1. Melt the white chocolate: Using a double boiler method, place a heatproof bowl over a pot filled with water, ensuring the bowl doesn’t touch the water. Add the salt and white chocolate chips to the bowl and heat over low, gentle stove heat, stirring continuously until the chocolate is completely melted and smooth.
  2. Sift in the matcha powder: Use a fine-mesh sieve to sift in the 4 ½ teaspoons of matcha powder into the melted chocolate, removing any clumps. Mix with a spatula until the mixture is smooth and evenly combined.
  3. Mix the melted matcha chocolate: In a large mixing bowl, add the Chex rice cereal. Working in three batches, pour the matcha chocolate over the cereal and gently fold with a rubber spatula until all the pieces are evenly coated. Set aside to cool to room temperature.
  4. Whisk together the powdered sugar and matcha powder: In a separate bowl, thoroughly whisk together the powdered sugar and 2 teaspoons matcha powder until well combined.
  5. Toss with powdered sugar: Once the coated Chex mixture has cooled to room temperature, transfer it to a large gallon ziplock bag. Add the powdered sugar mixture, seal the bag, and shake vigorously until the Chex is fully coated. Add additional powdered sugar mixture if needed to ensure an even coating.
  6. Chill and serve: Spread the coated puppy chow onto a large parchment-lined cookie sheet and refrigerate uncovered for 15-30 minutes to allow the coating to firm up. Store finished puppy chow in an airtight container in the refrigerator to maintain freshness.
