This indulgent chocolate mousse recipe offers a rich and creamy dessert experience with a deep bittersweet chocolate flavor, lightened by fluffy whipped egg whites and cream. Enhanced by a touch of orange liqueur and garnished with whipped cream and dark chocolate shavings, it’s perfect for an elegant treat.

Ingredients

For the Mousse

  • 8 oz Bittersweet Chocolate (70-74% cocoa)
  • 4 large Eggs
  • ¼ cup Granulated Sugar
  • 2 tablespoon Unsalted Butter
  • 2 tablespoon Orange Liqueur (optional)
  • 1 pinch Fine Sea Salt
  • 1 cup Heavy Cream

For Serving

  • 1 cup Whipped Cream
  • ¼ cup Dark Chocolate Shavings

Instructions

  1. Melt Chocolate: Begin by melting the bittersweet chocolate and unsalted butter together over a double boiler, stirring continuously until the mixture is smooth and fully combined. Once melted, remove from heat and let it cool slightly to avoid cooking the eggs in the next step.
  2. Mix Eggs and Sugar: Separate the eggs. In a separate mixing bowl, whisk the egg yolks with the granulated sugar until the mixture becomes pale and creamy. Gently fold this yolk and sugar mixture into the slightly cooled chocolate blend. Add the orange liqueur now if you choose to use it, stirring gently to combine.
  3. Beat Egg Whites: Using an electric mixer, beat the egg whites until stiff peaks form, ensuring they hold shape when the beaters are lifted. Carefully fold the beaten egg whites into the chocolate mixture in batches, taking care not to deflate the airiness, which is key to the mousse’s fluffy texture.
  4. Whip the Cream: In another chilled bowl, whip the heavy cream with an electric mixer until soft peaks form. Gently fold the whipped cream into the chocolate mixture to add lightness and delicacy to the mousse.
  5. Chill and Serve: Pour the completed mousse into individual serving dishes or bowls. Cover and refrigerate for at least 4 hours, or preferably overnight, to allow the mousse to fully set and the flavors to meld. Before serving, top each portion with freshly whipped cream and sprinkle with dark chocolate shavings for added texture and presentation.

Notes

  • Ensure eggs are at room temperature before starting to improve volume when whisking.
  • If you prefer a non-alcoholic version, simply omit the orange liqueur.
  • Use high-quality chocolate with 70-74% cocoa for a deep, balanced flavor.
  • Be gentle when folding the egg whites and whipped cream to retain the mousse’s airy texture.
  • This mousse can be prepared a day ahead and refrigerated to enhance flavors and convenience.
