Ingredients

Tapioca Pearls and Syrup

  • 100 g tapioca boba pearls
  • 50 g brown sugar

Honeydew Milk Tea

  • 400 g fresh honeydew melon (about half a small honeydew), cut into chunks
  • 20 g granulated sugar, to taste
  • 400 mL milk
  • Ice, as needed

Instructions

  1. Boil Tapioca Pearls: Fill a medium pot about two-thirds full with water, cover it, and bring to a boil. Once boiling, add all the tapioca pearls and stir immediately to prevent clumping. Boil uncovered for 15 minutes to cook the pearls fully.
  2. Let Tapioca Pearl Rest: After boiling, cover the pot, remove it from heat, and let the pearls sit in the hot water for another 15 minutes. This resting step ensures the pearls become soft and chewy.
  3. Sugar the Pearls: Drain the water from the tapioca pearls thoroughly. While still warm, stir in the brown sugar until it dissolves, creating a sweet syrup coating the pearls. Set aside.
  4. Prepare Honeydew Milk: In a blender, combine the honeydew melon chunks, granulated sugar (adjust sweetness to taste), and milk. Blend until the mixture is smooth and creamy.
  5. Assemble the Drink: To each serving glass, add about 100 g of the brown sugar-coated boba pearls. Fill the glass about halfway with ice cubes, then pour the honeydew milk over the ice to fill the glass. Garnish with extra honeydew chunks if desired.
  6. Serve: Stir the bubble tea well before drinking to combine the flavors and enjoy the chewy texture of tapioca pearls with the fresh honeydew flavor.
