Coating

  • 3 tablespoons honey
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • ½ teaspoon fine sea salt, plus extra for sprinkling
  • ¼ teaspoon ground cinnamon (optional)

Instructions

  1. Preheat the oven. Preheat your oven to 325°F (160°C) and prepare a baking sheet by lining it with parchment paper or a silicone baking mat to prevent sticking.
  2. Melt the coating. In a small saucepan over low heat, gently melt the unsalted butter and honey together, stirring continuously until the mixture is smooth and fully combined.
  3. Toss the nuts. Place the raw cashews into a large mixing bowl. Pour the warm honey-butter mixture over them, then stir well until every nut is evenly coated with the glaze.
  4. Add flavor. Sprinkle the brown sugar, fine sea salt, and if using, ground cinnamon over the coated cashews. Mix thoroughly so the sugar adheres evenly to the nuts.
  5. Bake. Spread the coated cashews in an even single layer on the prepared baking sheet. Bake in the oven for 12 to 15 minutes, stirring once halfway through baking to ensure even roasting, until the cashews turn golden and emit a fragrant aroma.
  6. Cool and finish. Remove the baking sheet from the oven and immediately sprinkle lightly with additional sea salt if you like. Allow the cashews to cool completely on the sheet; they will crisp up as they cool down.
  7. Store. Once fully cooled, transfer the honey roasted cashews to an airtight container. Store at room temperature for up to 2 weeks to enjoy as a flavorful snack.
