This comforting Lasagna Soup combines all the flavors of classic lasagna in a hearty, easy-to-make soup. Ground beef, aromatic onions, garlic, and tender lasagna noodles simmer in a flavorful tomato and marinara broth, then finished with melty mozzarella and creamy ricotta cheese, making it a perfect cozy meal for any day.

Ingredients

Soup Base

  • 1 pound lean ground beef or ground turkey
  • 1 small yellow onion, diced
  • 5 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups marinara sauce
  • 15 oz can diced tomatoes
  • Salt and pepper to taste

Pasta

  • 8 broken lasagna noodles

Cheese Toppings

  • ½ cup grated mozzarella cheese
  • ½ cup ricotta cheese
  • Grated parmesan cheese (to taste, for stirring in before serving)

Additional Ingredients

  • Balsamic vinegar (amount not specified, about 1-2 tablespoons suggested for flavor)

Instructions

  1. Brown the Meat: In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess grease to keep the soup light.
  2. Add Ingredients to Slow Cooker: Transfer the cooked meat to a slow cooker. Add the diced onion, minced garlic, chicken broth, marinara sauce, diced tomatoes, salt, and pepper. Stir everything well to combine.
  3. Cook the Soup: Cover and cook on Low for 6-8 hours or on High for 3-4 hours to develop rich flavors and tender textures.
  4. Add Lasagna Noodles: About 30 minutes before serving, stir in the broken lasagna noodles. Cover and continue cooking until noodles are tender, about 30 minutes.
  5. Finish and Serve: Before serving, stir in balsamic vinegar and grated parmesan cheese. Adjust seasoning with additional salt and pepper if needed. Serve topped with grated mozzarella and dollops of ricotta cheese for that authentic lasagna taste.

Notes

  • For a lighter version, use ground turkey instead of beef and low-sodium chicken broth.
  • If you don’t have a slow cooker, you can simmer the soup on the stovetop for 45 minutes to an hour, adding noodles in the last 15 minutes.
  • Adding fresh basil or Italian seasoning can enhance the flavor.
  • Leftovers reheat well and thicken over time; you may want to add extra broth or water when reheating.
