This Ham and Cheese Puff Pastry recipe is a delightful combination of flaky, buttery puff pastry filled with savory sliced deli ham and melted Gruyère cheese. Enhanced with a hint of Dijon mustard and finished with a golden egg wash and optional everything bagel seasoning, these pastries make a perfect appetizer, snack, or light meal that’s easy to prepare and bake to perfection.

Ingredients

Dough

  • 490 grams puff pastry, thawed (2 sheets)

Filling

  • 285 grams sliced deli ham
  • 225 grams Gruyère cheese slices
  • 80 millilitres Dijon mustard (optional)

Finishing

  • 1 large egg, whisked
  • Everything bagel seasoning (optional)

Instructions

  1. Thaw puff pastry: Remove the puff pastry sheets from packaging and allow them to thaw until they become pliable, making them easier to work with.
  2. Preheat oven and prepare baking sheet: Preheat your oven to 220°C (428°F) and line a large baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  3. Cut pastry sheets: Roll out each thawed puff pastry sheet on a flat surface. Using a sharp knife or pizza cutter, cut each sheet into 6 rectangles. Optionally, gently roll to create square shapes.
  4. Prepare fillings on pastry: Brush the edges of each pastry rectangle with the whisked egg to help with sealing. If using Dijon mustard, spread it in the center of each pastry piece. Next, place a slice of Gruyère cheese and a folded slice of deli ham on top of the mustard.
  5. Fold and seal pastries: Fold one corner of each rectangle toward the center, then fold the opposite corner over to fully enclose the filling. Press gently along the edges to seal well to prevent leakage during baking.
  6. Arrange and finish pastries: Arrange the filled pastries evenly on the prepared baking sheet. Brush the tops with the remaining egg wash to promote a golden shine. Sprinkle everything bagel seasoning over the top if desired for extra flavor and texture.
  7. Bake pastries: Place the baking sheet in the preheated oven and bake for 18 to 22 minutes, or until the pastries are puffed up, golden brown, and the cheese inside has melted completely.
  8. Cool and serve: Remove the pastries from the oven and let them cool briefly on the baking sheet. Serve warm for the best taste experience.

Notes

  • Ensure puff pastry is fully thawed and pliable for easy handling to avoid cracking or tearing.
  • Dijon mustard is optional but adds a lovely sharpness that complements the ham and cheese.
  • Folding the pastry carefully will help keep the filling inside while baking.
  • Everything bagel seasoning adds a savory crunch and can be substituted with sesame seeds or poppy seeds based on preference.
  • These pastries are best enjoyed fresh and warm but can be reheated in the oven for a few minutes if needed.
