This Grilled Cheese Burrito combines the hearty flavors of seasoned ground beef, creamy cheeses, and zesty chipotle sauce wrapped in a warm flour tortilla. Perfect for a quick and satisfying lunch, this recipe features a crispy, cheesy crust formed by grilling the burrito in a skillet, delivering a delicious blend of textures and bold flavors.

Ingredients

Beef Mixture

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)
  • ¼ cup water

Fillings

  • 1 cup cooked white rice
  • ½ cup sour cream
  • ½ cup nacho cheese sauce
  • ¼ cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Wrapping and Grilling

  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Cook the Beef: In a skillet over medium heat, brown 1 lb ground beef until fully cooked, about 8–10 minutes. Drain any excess grease, then add 1 packet taco seasoning and ¼ cup water. Simmer the mixture for 5 minutes to let the flavors meld and sauce thicken.
  2. Warm the Tortillas: Heat the flour tortillas on a dry skillet or briefly in the microwave until flexible and easy to roll without tearing.
  3. Assemble the Burritos: Lay one warmed tortilla flat. Spread 1 cup cooked white rice, then layer the seasoned beef, ½ cup nacho cheese sauce, ¼ cup chipotle sauce, and ½ cup sour cream evenly. Top with an even mix of shredded cheddar and mozzarella cheeses.
  4. Grill the Burritos: Heat a clean skillet over medium heat and sprinkle about 2 tablespoons of shredded cheese onto the surface. Place the burrito seam-side down onto the melted cheese. Cook for 3–4 minutes or until the cheese melts and forms a crispy crust, then carefully flip and grill the other side similarly until golden and crispy. Remove and serve warm.

Notes

  • You can adjust the heat level by varying the amount of chipotle sauce.
  • Use homemade taco seasoning for a cleaner ingredient profile if desired.
  • Butter the tortillas lightly before grilling for an extra golden crust instead of oil.
  • For a vegetarian version, substitute ground beef with seasoned textured vegetable protein or beans.
  • Serve with fresh salsa or guacamole for added freshness.
