Ingredients

For the Mushrooms:

  • 400 grams sliced cremini mushrooms
  • 2 tablespoons salted butter
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

For Cheese Spread Mixture:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons melted butter
  • 2 cloves garlic, finely minced
  • 1 tablespoon dried onion flakes
  • 1/4 teaspoon ground black pepper
  • 1/2 cup grated parmesan cheese
  • 1/2 cup grated havarti cheese
  • 1/2 cup grated swiss cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup green onions, thinly sliced

  • 4 slices sourdough bread

Instructions

  1. Sauté Mushrooms: In a large skillet over medium-high heat, add olive oil and butter. Once the butter melts, add sliced mushrooms, salt, and pepper. Stir to coat mushrooms and cook for 5 minutes.
  2. Add Worcestershire Sauce and Continue Cooking: Add Worcestershire sauce, stir, and cook for an additional 5 minutes until mushrooms turn a deep brown. Remove from skillet, transfer to a plate to cool. Separate and set aside the best-looking mushrooms for topping.
  3. Prepare Cheese Spread: In a bowl, whisk mayonnaise, sour cream, and melted butter until combined. Stir in minced garlic, dried onion flakes, and black pepper. Fold in parmesan, havarti, swiss, and mozzarella cheeses along with sliced green onions. Set mixture aside.
  4. Toast Bread: Arrange sourdough slices on a baking sheet in a single layer. Broil until lightly browned on one side. Flip and toast the other side. Remove and let bread cool slightly until warm to the touch.
  5. Combine Mushrooms with Cheese Spread: Fold the cooled sautéed mushrooms (excluding reserved ones) into the cheese mixture.
  6. Assemble Toasts: Spread the cheesy mushroom mixture evenly over each toasted bread slice. Top each with the reserved whole mushroom slices.
  7. Broil to Melt Cheese: Return assembled toasts to the broiler and cook for 3–5 minutes under a 500°F broiler until the cheese bubbles and browns without burning.
  8. Garnish and Serve: Sprinkle additional sliced green onions on top and serve the toasts immediately while warm and bubbly.
