Ingredients

Shrimp and Garlic Butter

  • 1 tbsp chopped fresh dill

Creamy Herb Rice

  • 2 cups cooked rice
  • 3 tbsp butter (for rice, combining butter and olive oil)
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Additional salt and pepper, to taste

Instructions

  1. Sear the Shrimp: Heat olive oil in a skillet over medium-high heat. Pat the shrimp dry and season them with salt and black pepper. Sear the shrimp in the hot skillet for 1–2 minutes on each side until they turn opaque. Remove the shrimp from the skillet and set aside.
  2. Prepare Garlic Butter Sauce: Reduce the heat to medium and melt the butter in the same skillet used for the shrimp. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the lemon juice, then return the shrimp to the skillet and toss to coat them evenly in the garlic butter sauce. Remove the skillet from heat.
  3. Make Creamy Herb Rice: In a separate saucepan, melt butter with a bit of olive oil over medium heat. Add the cooked rice, then pour in the heavy cream and chicken broth. Simmer the mixture until it slightly thickens, stirring continuously. Stir in grated Parmesan cheese, chopped parsley, dill, salt, and pepper until the rice is creamy and well combined.
  4. Assemble the Bowl: Spoon the creamy herb rice into serving bowls. Top generously with the garlic butter shrimp and drizzle any remaining garlic butter sauce from the skillet over the top. Garnish with additional fresh herbs or lemon zest if desired and serve immediately.
