Strawberry Parfaits are a delightful and refreshing layered dessert featuring sweet macerated strawberries, creamy Greek yogurt mixed with honey, whipped heavy cream, and a crunchy granola or biscuit layer. Perfect for a quick, no-cook treat that is both nutritious and delicious.

Ingredients

Strawberry Layer

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons sugar (optional, for macerating the berries)
  • 1 teaspoon fresh lemon juice

Cream Layer

  • 1 cup plain or vanilla Greek yogurt
  • ½ cup heavy cream, whipped to soft peaks
  • 2 tablespoons honey or maple syrup

Crunch Layer

  • 1 cup granola or crushed digestive biscuits
  • 2 tablespoons chopped nuts (optional, for extra crunch)

Instructions

  1. Prepare the Strawberries: Hull and slice your fresh strawberries into even pieces. In a small bowl, toss the strawberries with sugar (if using) and lemon juice. Let the berries sit for 5–10 minutes to macerate, making them juicier and sweeter.
  2. Whip the Cream: Pour the heavy cream into a mixing bowl. Using a whisk or electric mixer, whip the cream until soft peaks form. For best results, chill the bowl and whisk before whipping.
  3. Mix the Yogurt Layer: In another bowl, combine Greek yogurt with honey or maple syrup. Stir gently until smooth and creamy.
  4. Assemble the Parfaits: Start by spooning a layer of the yogurt mixture into the bottom of parfait glasses or jars. Add a layer of granola or crushed biscuits on top of the yogurt. Spoon a layer of macerated strawberries over the granola. Repeat the layers until the glass is full, finishing with strawberries on top. Press layers gently with the back of a spoon for even layers.
  5. Add Final Touches: Sprinkle chopped nuts or drizzle a little honey over the top layer if desired. Chill the parfaits in the fridge for 30 minutes to let the flavors meld together. Serve cold for the best texture and fresh strawberry flavor.

Notes

  • To macerate berries, allowing them to rest with sugar and lemon juice enhances sweetness and juiciness.
  • Whipping cream in a chilled bowl helps achieve soft peaks quickly.
  • Use vanilla Greek yogurt for added flavor or plain for a tangier taste.
  • The parfaits can be customized with your favorite granola or biscuits for crunch.
  • Chilling before serving improves texture and flavor blending.
  • Optional nuts add texture but can be omitted for nut-free diets.
