Ingredients

Donut Batter

  • 1 tablespoon unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • ¾ teaspoon pure vanilla extract
  • ½ cup buttermilk
  • ¾ cup cake flour
  • ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 12-15 fresh strawberries (about 1 cup pureed)

Strawberry Glaze

  • Reserved strawberry puree from above
  • Powdered sugar (quantity as needed to achieve glaze consistency)
  • Optional: 1 teaspoon milk or water
  • Optional: ½ teaspoon pure vanilla extract

Instructions

  1. Prepare the Strawberry Puree: Wash and hull 12-15 fresh strawberries thoroughly. Using a blender or food processor, blend the strawberries until smooth to create about 1 cup of puree. Set this puree aside, reserving some for the glaze later.
  2. Cream Butter and Sugar: In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until the mixture is light and fluffy. This aerates the batter for a tender donut texture. Then, beat in the large egg and pure vanilla extract until combined.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the cake flour, all-purpose flour, baking soda, baking powder, and salt. This ensures even distribution of the leavening agents and prevents lumps.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing gently until just combined to avoid overworking the batter. Then, carefully fold in the fresh strawberry puree. The resulting batter should be thick yet pourable.
  5. Prepare the Donuts for Baking: Preheat your oven to 350°F (175°C). Lightly grease your donut pans to prevent sticking. Spoon or pipe the batter evenly into each cavity, filling each about two-thirds full to allow room for rising.
  6. Bake the Donuts: Place the pans in the oven and bake for 12-15 minutes, or until a toothpick inserted into one donut comes out clean. Once done, let the donuts cool in the pans for 5-10 minutes before carefully inverting them onto a wire rack to cool completely.
  7. Prepare the Strawberry Glaze: Take the reserved strawberry puree and combine it with powdered sugar, stirring until you reach a thick but pourable consistency. Adjust thickness by adding more powdered sugar if too thin, or a teaspoon of milk/water if too thick. Optionally, stir in vanilla extract for extra flavor.
  8. Glaze the Donuts: Once the donuts are completely cool, dip the tops into the prepared strawberry glaze. Allow the glaze to set for 15-20 minutes at room temperature before serving, ensuring a perfect finish.

Notes

  • Use fresh, ripe strawberries for the best natural sweetness and flavor.
  • Do not overmix the batter to avoid tough donuts.
  • Ensure donuts are fully cooled before glazing to prevent melting or running glaze.
  • Leftover glazed donuts can be stored in an airtight container at room temperature for up to 2 days.
  • For a dairy-free version, substitute buttermilk with a plant-based milk mixed with lemon juice or vinegar and use vegan butter.
