Ingredients

For the Roll Ups

  • 1 lb thinly sliced roast beef
  • 1.5 cups shredded mozzarella or provolone cheese
  • 4 large flour tortillas

  • 1 teaspoon dried parsley

For the Au Jus

  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce

  • 1 teaspoon onion powder
  • Salt & pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking the roll ups.
  2. Assemble Roll Ups: Lay the flour tortillas flat on a clean surface and evenly distribute the thinly sliced roast beef followed by the shredded mozzarella or provolone cheese over each tortilla.
  3. Roll and Secure: Tightly roll each tortilla from the bottom up, folding in the sides as you go to secure the filling inside the roll.
  4. Prepare Roll Ups for Baking: Brush the outside of each rolled tortilla with melted butter, then sprinkle garlic powder, onion powder, and dried parsley evenly over the tops to add flavor and a golden hue.
  5. Bake: Place the prepared roll ups on the lined baking sheet and bake in the preheated oven for 12–15 minutes until they are golden brown and the cheese inside has melted.
  6. Make Au Jus: While the roll ups bake, combine beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, salt, and pepper in a saucepan. Bring to a simmer and cook gently for 5–7 minutes to develop a flavorful dipping sauce.
