These Freezer-Friendly Breakfast Burritos are a delicious, convenient way to start your day. Packed with scrambled eggs, breakfast sausage, sautéed vegetables, and melted cheddar cheese, these burritos can be made ahead, frozen, and quickly reheated for a satisfying breakfast on busy mornings.

Ingredients

Egg Mixture

  • 6 large eggs
  • Salt and pepper, to taste

Vegetables

  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions

Meat and Cheese

  • 1 cup cooked breakfast sausage, crumbled
  • 1 cup shredded cheddar cheese

Others

  • 4 large flour tortillas (10-inch)
  • 1 tablespoon olive oil
  • Optional: salsa, sour cream, or avocado for serving

Instructions

  1. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add diced onions and bell peppers, cooking and stirring occasionally until softened, about 3-4 minutes.
  2. Scramble Eggs: In a bowl, whisk the eggs with salt and pepper. Pour the eggs into the skillet with the sautéed vegetables and scramble them together, cooking until the eggs are fully set and cooked through.
  3. Combine Ingredients: Remove the skillet from heat and fold in the cooked crumbled breakfast sausage along with the shredded cheddar cheese, allowing the cheese to melt slightly from the residual heat.
  4. Prepare Tortillas: Warm the flour tortillas briefly to make them pliable, either by microwaving for 15-20 seconds or warming in a dry skillet for a few seconds on each side.
  5. Assemble Burritos: Spoon an equal portion of the egg mixture onto each tortilla. Fold the sides inward and then roll each tortilla tightly from one end to the other to form burritos.
  6. Wrap and Freeze: Wrap each burrito individually in foil or plastic wrap, ensuring they are sealed well to prevent freezer burn. Place the wrapped burritos in a freezer-safe bag and freeze until needed.
  7. Reheat: To serve, unwrap a frozen burrito and microwave for 2-3 minutes until heated through, or bake in a preheated oven at 350°F (175°C) for approximately 20 minutes until warmed thoroughly. Optionally, serve with salsa, sour cream, or avocado.

Notes

  • To make the burritos vegetarian, omit the breakfast sausage and substitute with sautĂ©ed mushrooms or extra vegetables.
  • For meal prep, these burritos can be stored in the freezer for up to 2 months.
  • Warming the tortillas before assembling prevents cracking when rolling.
  • Leftover burritos reheat well in a toaster oven or conventional oven for crispier texture.
  • Adjust seasoning by adding hot sauce or herbs for additional flavor.
