Ingredients

Milk Tea

  • 625 g dairy or non-dairy milk (oat milk recommended)
  • 4 Earl Grey tea bags

Tapioca Pearls

  • 100 g tapioca pearls
  • 50 g brown sugar
  • 1-2 tablespoons water (optional, for syrup consistency)

Instructions

  1. Steep the Earl Grey Milk: In a small pot, combine the milk and Earl Grey tea bags. Bring to a gentle simmer, then turn off the heat. Cover the pot and let it steep for 10 minutes to infuse the milk with tea flavor. Use the back of a spoon to press the tea bags against the side of the pot, extracting as much tea-infused milk as possible before discarding the bags. Transfer the milk tea to a glass container with a spout, cover, and chill it in the refrigerator.
  2. Boil the Tapioca Pearls: Rinse the pot and fill it with about one inch of water. Bring the water to a rolling boil. Add the tapioca pearls immediately and stir to prevent them from sticking together. Boil the pearls uncovered for 15 minutes.
  3. Let Tapioca Pearls Sit: Remove the pot from heat, cover it, and let the tapioca pearls sit and cook further for 15 minutes without heat to achieve the perfect chewy texture.
  4. Prepare Brown Sugar Syrup: In a small bowl, place the brown sugar. Using a slotted spoon, transfer the cooked tapioca pearls to the bowl, draining most of the cooking liquid. Stir the pearls with the brown sugar using the retained heat to dissolve the sugar and create a syrup. If the mixture is too dry, add 1-2 tablespoons of water to reach syrup consistency.
  5. Assemble the Bubble Tea: In each serving glass, add about 100 g of the brown sugar-coated tapioca pearls. Fill the glass three-quarters to full with ice. Pour in approximately 300 g of chilled Earl Grey milk tea. Stir well to combine. Adjust sweetness by adding any leftover syrup to taste.
