Ingredients

  • 1/2 bunch dill (around 10g), finely chopped
  • 1/2 bunch parsley (around 15g), finely chopped
  • 1/2 teaspoon salt, or to taste
  • Black pepper, to taste

Instructions

  1. Prepare Ingredients: Finely chop the tomatoes and place them in a large mixing bowl. Add the finely chopped red onion, minced garlic, lemon zest, and chopped dill and parsley to the bowl.
  2. Make the Batter: To the tomato and herb mixture, add the plain flour, baking powder, salt, and black pepper. Mix thoroughly until you form a cohesive, thick batter that holds together well.
  3. Heat the Pan: Pour enough olive oil to cover the bottom of a frying pan and warm it over medium heat until shimmering.
  4. Fry the Fritters: Using heaping tablespoons, drop portions of the batter carefully into the hot oil. Fry each fritter for about 2 minutes until the underside is golden brown, then flip to cook the other side for an additional 2 minutes until equally crisp and browned.
