Ingredients

Main Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Topping (Optional)

  • 1 cup breadcrumbs (optional)
  • 1 tablespoon olive oil (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) to prepare for baking the casserole.
  2. Combine Ingredients: In a large mixing bowl, combine the shredded chicken, chopped spinach, softened cream cheese, half of the shredded mozzarella cheese, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
  3. Transfer Mixture: Grease a 9×13 inch baking dish, then transfer the combined mixture to it, spreading it evenly across the dish for uniform baking.
  4. Add Toppings: If using, sprinkle the breadcrumbs evenly over the top of the casserole and drizzle with olive oil to help create a crispy topping.
  5. Top with Cheese: Sprinkle the remaining mozzarella cheese over the breadcrumb layer or casserole surface.
  6. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes until the casserole is bubbly and the top is golden brown and crispy.
  7. Rest and Serve: Remove from the oven and allow the casserole to sit for 5 minutes before serving to let it set and cool slightly for better slicing.

Notes

  • You can substitute frozen spinach for fresh, but be sure to thaw and squeeze out excess moisture before using.
  • The breadcrumbs and olive oil topping is optional but adds a nice crunchy texture to the casserole.
  • Use low-fat cream cheese and sour cream to reduce fat content if desired.
  • Leftovers can be refrigerated and reheated within 2-3 days for a quick meal.
