Creamy Crockpot Marry Me Chicken is a luscious, slow-cooked dish featuring tender chicken breasts smothered in a rich, creamy Parmesan sauce with sun-dried tomatoes and Italian seasoning. Perfect for an effortless dinner, this recipe combines comforting flavors and minimal prep, resulting in a meal that’s indulgent yet simple to make in your slow cooker.

Ingredients

Chicken

  • 2 lbs boneless, skinless chicken breasts

Sauce

  • 1 cup chicken broth
  • 1 (8 ounce) package cream cheese, cubed
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, drained and chopped
  • 1 tablespoon minced garlic
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Thickener

  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (for slurry)

Instructions

  1. Prepare the Chicken: Place the boneless, skinless chicken breasts in the bottom of your slow cooker evenly.
  2. Mix the Sauce: In a separate bowl, whisk together the chicken broth, cubed cream cheese, heavy cream, grated Parmesan cheese, chopped sun-dried tomatoes, minced garlic, Italian seasoning, salt, and black pepper until the mixture is mostly combined, with some small pieces of cream cheese remaining.
  3. Combine and Cook: Pour the sauce mixture evenly over the chicken breasts in the slow cooker. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours until the chicken is fully cooked and tender.
  4. Shred Chicken: Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker to mix with the sauce.
  5. Thicken the Sauce: Stir the cornstarch slurry (cornstarch mixed with cold water) into the sauce in the slow cooker. Mix well to combine.
  6. Final Cooking: Cook on HIGH for an additional 10 to 15 minutes, stirring occasionally, until the sauce thickens to your desired consistency.
  7. Serve: Serve the creamy Parmesan marinated slow cooker chicken immediately, ideally over pasta, rice, or mashed potatoes for a comforting meal.

Notes

  • You can use either fresh or jarred sun-dried tomatoes, but make sure to drain and chop them finely.
  • Adjust seasoning to taste before serving, adding more salt or Italian seasoning if desired.
  • For a lighter version, substitute heavy cream with half-and-half, but the sauce may be less rich.
  • Leftovers taste great reheated and can be stored in an airtight container in the refrigerator for up to 3 days.
  • If preferred, serve with crusty bread to soak up the creamy sauce.
