A hearty and comforting lentil and carrot stew packed with warm spices and nutritious ingredients. This easy-to-make vegetarian stew features tender lentils simmered with fresh carrots, onions, and garlic in a savory vegetable broth, perfect for a cozy meal any time of the year.

Ingredients

Vegetables and Aromatics

  • 3 large carrots, peeled and sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Dry Ingredients & Spices

  • 1 cup lentils, rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Liquids and Oils

  • 4 cups low sodium vegetable broth
  • 1 tablespoon olive oil

Instructions

  1. Heat the oil and sauté onion and garlic: In a large pot over medium heat, warm the olive oil. Add the diced onion and minced garlic, cooking until the onion becomes translucent and fragrant, about 3-4 minutes.
  2. Add carrots and spices: Stir in the sliced carrots, ground cumin, and smoked paprika. Cook this mixture for approximately 5 minutes, allowing the carrots to begin softening and the spices to release their aromas.
  3. Add lentils and broth, then simmer: Pour in the rinsed lentils and vegetable broth. Bring the stew to a boil, then reduce the heat to low. Let it simmer gently for 25 to 30 minutes, or until the lentils are tender and the flavors meld together.
  4. Season and serve: Taste the stew and season with salt and pepper as desired. Serve the stew hot, perfect on its own or paired with crusty bread.

Notes

  • For a creamier texture, you can partially blend the stew before serving.
  • Adding a splash of lemon juice before serving brightens the flavors.
  • This stew can be refrigerated for up to 4 days and freezes well for up to 3 months.
  • Adjust seasoning towards the end of cooking to ensure balanced flavor.
