Delicious and smoky Chipotle Honey Chicken Thighs baked to perfection and served with creamy smoked gouda mashed potatoes. This comforting meal balances sweet, spicy, and savory flavors with tender chicken and rich, cheesy potatoes.

Ingredients

For the Chicken Thighs

  • 4 pieces bone-in chicken thighs (about 2 pounds)
  • ¼ cup honey
  • 2 tablespoons chipotle chili powder
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Mashed Potatoes

  • 2 pounds russet potatoes, peeled and cut into chunks
  • 1 cup milk
  • 4 ounces smoked gouda cheese, shredded
  • 4 tablespoons unsalted butter
  • Salt and pepper, to taste

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to prepare for baking the chicken thighs.
  2. Prepare the Marinade and Chicken: In a large bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Coat the chicken thighs thoroughly with this marinade. Let them sit for at least 15 minutes; for best flavor, refrigerate them overnight if possible.
  3. Cook the Potatoes: Place the peeled potato chunks in a large pot and cover with water. Add a pinch of salt. Bring to a boil over medium-high heat and cook the potatoes until fork-tender, approximately 15-20 minutes. Drain well.
  4. Mash the Potatoes: Return the drained potatoes to the pot. Add milk, unsalted butter, and shredded smoked gouda cheese. Mash the mixture until smooth and creamy. Season with salt and pepper to taste. Keep warm on low heat.
  5. Bake the Chicken: Arrange the marinated chicken thighs skin-side up in a baking dish or oven-safe skillet. Place in the preheated oven and bake for 25-30 minutes, until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy.
  6. Serve: Plate the baked chicken thighs alongside the smoked gouda mashed potatoes. Spoon any pan juices over the chicken to add extra flavor before serving.

Notes

  • Marinating the chicken overnight intensifies the flavor.
  • Use a meat thermometer to ensure the chicken is safely cooked to 165°F (75°C).
  • For a creamier mash, add more milk or butter based on preference.
  • Smoked gouda adds a unique flavor, but you can substitute with cheddar or another smoked cheese if desired.
  • Leftover chicken can be stored in the refrigerator for up to 3 days.
