Ingredients

Chicken Stew:

  • 1 ½ lbs boneless, skinless chicken thighs or breasts, cut into chunks

  • 1 medium onion, chopped
  • 3 garlic cloves, minced

Instructions

  1. Prepare the ingredients: Cut the chicken into chunks, peel and cube the sweet potatoes, slice the carrots, dice the celery, chop the onion, and mince the garlic cloves to have all ingredients ready for cooking.
  2. Add to slow cooker: Place the chicken, sweet potatoes, carrots, celery, onion, and garlic into the slow cooker bowl. Pour in the chicken broth and the diced tomatoes if you choose to use them for extra flavor.
  3. Season the stew: Add the dried thyme, dried rosemary, bay leaf, paprika, salt, and black pepper. Stir everything gently to combine all the flavors and ingredients thoroughly.
  4. Slow cook the stew: Cover the slow cooker and cook the stew on low for 6–7 hours or on high for 3–4 hours. Cook until the chicken is tender and the sweet potatoes have softened completely.
