Instructions

  1. Cook the Noodles: Bring a pot of water to a rolling boil and cook the lo mein noodles according to the package instructions, usually around 3-5 minutes until tender but firm. Drain the noodles well and set aside to prevent sogginess.
  2. Prepare the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, water, and cornstarch if using. The cornstarch will help thicken the sauce and make it cling nicely to the noodles and chicken.
  3. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken thighs and stir-fry them for about 4 to 5 minutes until they are fully cooked and lightly browned. Remove the chicken from the skillet and set aside to keep warm.
  4. Sauté Aromatics and Vegetables: Using the same skillet, add the remaining 1 tablespoon of vegetable oil. Stir-fry the minced garlic and ginger for about 30 seconds until fragrant, taking care not to burn them.
