This Chicken Crust Pizza is a delicious low-carb alternative to traditional pizza, made with a protein-packed ground chicken crust that’s crispy on the edges and tender inside. Topped with savory pizza sauce, melted mozzarella cheese, and your favorite herbs, it’s a flavorful, gluten-free meal perfect for a quick weeknight dinner or casual weekend treat.

Ingredients

For the Chicken Crust

  • 1 lb ground chicken (93% lean preferred)
  • 1 egg
  • 0.5 cup grated parmesan or mozzarella cheese
  • 0.5 tsp garlic powder
  • 1 tsp Italian seasoning
  • 0.25 tsp salt

For the Topping

  • 3–4 tbsp pizza sauce of choice
  • 0.5 cup shredded mozzarella cheese

Optional

  • 1 tbsp olive oil or garlic oil (for brushing crust)
  • 1 fresh basil leaf or chopped herbs (for garnish)

Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C). Line a baking sheet or pizza pan with parchment paper to prevent sticking and allow for easy cleanup.
  2. Prepare the crust mixture: In a mixing bowl, combine the ground chicken, egg, grated parmesan or mozzarella cheese, garlic powder, Italian seasoning, and salt. Mix gently until just combined without overworking the meat to keep the crust tender.
  3. Form the crust: Press the chicken mixture firmly into a 10-inch circle on the prepared baking sheet, spreading it about ¼ inch thick evenly for consistent cooking.
  4. Bake the crust: Place the crust in the preheated oven and bake for 18–20 minutes until the edges are golden brown and the crust feels firm to the touch, indicating it is cooked through.
  5. Add toppings: Remove the crust from the oven. Spread the pizza sauce evenly over the crust surface, then sprinkle shredded mozzarella cheese on top. Add any additional toppings if desired.
  6. Bake the pizza: Return the pizza to the oven and bake an additional 8–10 minutes until the cheese has melted fully. For a bubbly, golden-brown cheese top, broil the pizza for an extra 2 minutes, watching closely to avoid burning.
  7. Finish and serve: Remove the pizza from the oven and let it rest for 2–3 minutes to set. Optionally brush the crust edges with olive or garlic oil and sprinkle with fresh basil or chopped herbs. Slice and serve hot for best flavor.

Notes

  • Using 93% lean ground chicken helps reduce excess grease, resulting in a crispier crust.
  • Do not overmix the chicken mixture to keep the crust from becoming dense.
  • You can customize the toppings with vegetables or other favorite pizza ingredients while keeping the base low-carb.
  • Brush the crust with oil after baking to add flavor and help the crust stay tender.
  • Monitor the broil step closely as the cheese can burn quickly.
