This Fresh Cherry Crisp is a delightful dessert combining juicy, sweet-tart cherries with a buttery, crunchy oat topping. Perfect for showcasing summer cherries, this easy-to-make crisp is baked until golden and bubbling, creating a comforting and satisfying treat ideal for any occasion.

Ingredients

Cherry Filling

  • 5 cups fresh cherries, pitted and halved
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

Crisp Topping

  • 3/4 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to ensure it reaches the correct temperature for baking the crisp evenly.
  2. Prepare the cherry filling: In a large mixing bowl, combine the pitted and halved cherries with granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss everything gently but thoroughly to coat the cherries evenly with the mixture. Then, pour this cherry filling into a greased baking dish, spreading it into an even layer.
  3. Make the crisp topping: In a separate bowl, mix together the old-fashioned oats, all-purpose flour, brown sugar, chopped nuts (if using), ground cinnamon, and salt. Using a pastry cutter or your fingers, cut in the cold, cubed unsalted butter until the mixture becomes crumbly and resembles coarse crumbs. Sprinkle this oat topping evenly over the cherry filling in the baking dish.
  4. Bake: Place the baking dish in the preheated oven and bake for 35 to 40 minutes until the topping is golden brown and the cherry filling is bubbly and thickened.
  5. Serve: Remove the crisp from the oven and allow it to cool for 10 to 15 minutes to let the filling set slightly. Serve warm, optionally with a scoop of vanilla ice cream or whipped cream for extra indulgence.

Notes

  • You can substitute fresh cherries with frozen cherries (thawed and drained) if fresh are not available.
  • For a nuttier flavor, toast the pecans or walnuts before adding to the topping.
  • Use unsalted butter to better control salt levels in the crisp topping.
  • Leftovers can be stored covered in the refrigerator for up to 3 days.
  • To reduce sweetness, adjust sugar amounts according to the tartness of your cherries.
