Instructions

  1. Prepare Onion Rings: Peel the onions and slice them into 1/2-inch-thick rings, then carefully separate the rings to keep them intact.
  2. Stuff with Cheese: Slice mozzarella cheese into 4 even strips. Nest a smaller onion ring inside a larger one and fill the space in between with the mozzarella strips. Repeat for all onion rings.
  3. Freeze Rings: Place the stuffed onion rings in a single layer on a tray and freeze them for 1 hour until firm to make handling easier during breading.
  4. Set Up Breading Stations: Prepare three separate bowls: one with all-purpose flour, one with beaten eggs, and one with plain breadcrumbs. Remove the frozen onion rings from the freezer when ready to bread.
  5. Bread the Rings: Dredge each stuffed onion ring first in flour, then dip in egg, and coat thoroughly with breadcrumbs. For an extra crispy crust, repeat the egg and breadcrumb coating. Place the coated rings back on a tray and freeze until ready to fry.
  6. Deep Fry: Heat vegetable oil in a deep pot to 350°F (175°C). Fry the rings in batches for 2–3 minutes, turning occasionally, until golden brown and crisp. Be careful not to over-fry to avoid cheese leakage.
  7. Drain and Serve: Remove the fried onion rings with a slotted spoon, drain on paper towels, and serve hot with marinara sauce for dipping.
