  • 1/2 cup (120ml) honey or maple syrup
  • 1/4 cup (60ml) vegetable oil
  • 1 teaspoon (5ml) vanilla extract

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch (20x20cm) baking pan with parchment paper, ensuring it covers the sides for easy removal later.
  2. Mix Wet Ingredients: In a large bowl, combine the mashed ripe bananas, honey or maple syrup, vegetable oil, and vanilla extract. Stir the mixture well to achieve a smooth, consistent texture.
  3. Add Dry Ingredients: Add the old-fashioned rolled oats, ground cinnamon, and salt to the wet mixture. Stir thoroughly until all ingredients are fully incorporated.
  4. Fold in Nuts and Fruit: Gently fold in the chopped walnuts and dried cranberries to distribute them evenly throughout the batter.
