Ingredients

Corn Ribs

  • 3 Fresh Corn Cobs
  • 4 tablespoons Butter
  • 1 teaspoon Chili Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Cumin
  • ¼ teaspoon Black Pepper
  • 2 tablespoons Grated Cotija or Parmesan Cheese
  • Fresh Cilantro (optional)

Spicy Mayo

  • ½ cup Mayonnaise
  • 1 tablespoon Sriracha

Instructions

  1. Prepare the Corn Ribs: Using a cutting board, cut the ends off each corn cob. Then, place the cob vertically and carefully slice it down the center lengthwise, rocking the knife back and forth until it cuts through. Repeat for all 3 cobs.
  2. Cut into Ribs: Place each half of the corn cob with the corn side up and rib side down. Cut each half lengthwise again, then cut them in half on the short edge to create 8 long corn ribs per cob.
  3. Brush with Butter: Melt the butter in a microwave-safe dish and brush it evenly over all the corn ribs to coat them thoroughly.
  4. Air Fry the Corn: Arrange the corn ribs in a single layer in the air fryer basket (you may need to cook in batches). Cook at 400°F for 6 minutes, then rotate or flip the corn ribs and cook for another 6 minutes until tender and slightly crispy.
  5. Mix Spicy Mayo: While the corn cooks, combine mayonnaise and sriracha in a small bowl, mixing well to create a spicy mayo sauce.
  6. Combine Seasonings: In another small bowl, mix chili powder, paprika, salt, garlic powder, cumin, and black pepper to form a seasoning blend.
  7. Season the Corn Ribs: Place the cooked corn ribs in a large bowl. Sprinkle the seasoning blend evenly over the ribs, then top with grated cotija or parmesan cheese. Optionally, garnish with freshly chopped cilantro.
